Experimental Farming in Fazenda Santuário Sul

Fazenda Santuário Sul is the experimental farm of producer Luiz Paulo Dias Pereira Filho in Carmo de Minas, Brazil. Known for cultivating exotic coffee varieties and exploring modern processing methods, the farm challenges the classic perception of Brazilian coffee as purely chocolate and nut driven. Today, over 30 varieties are grown across the farm, each contributing to a broader exploration of what Brazilian coffee can become through variety, terroir, and process.

The Starmaya Variety

Among the experimental varieties cultivated at Santuário Sul is Starmaya, a rare F1 hybrid developed to balance cup quality, resilience, and practicality for producers. Many highly regarded coffee cultivars are celebrated for exceptional flavour but remain difficult to farm due to low yields, disease susceptibility, or the need for costly propagation methods. Starmaya belongs to a newer generation of coffee breeding aimed at addressing this balance.

Unlike many F1 hybrids that require farmers to purchase and plant cloned saplings, Starmaya can be propagated by seed while still maintaining strong flavour potential and greater uniformity in the field.

Controlled Natural Fermentation

For this specific lot, Luiz uses a controlled natural fermentation process to amplify the coffee’s inherent characteristics. After harvest at peak ripeness, the cherries undergo a carefully managed fermentation period before drying as whole fruit. This process builds upon the classic chocolate profile often associated with coffees from Carmo de Minas, pushing the cup toward something deeper, more layered, and fruit driven while still retaining the smooth sweetness the region is known for.

A Fruit Forward Expression of Brazil

The result is a vibrant and expressive cup with notes of stonefruit and raisin upfront, followed by a sweet chocolate finish. The profile showcases jammy stonefruit sweetness layered with dried fruit complexity, while remaining balanced and approachable across both espresso and filter brewing.
