High Above Risaralda

Perched high above Belén de Umbría in Risaralda, La Macarena is where Juan David Gallego cultivates coffee among the cool mountain conditions of Colombia's coffee-growing highlands. At 2,200 metres above sea level, cherries mature slowly, developing the sweetness and complexity that define the farm's coffees. Each lot is carefully processed to highlight both the character of the variety and the distinct terroir from which it comes.

Believed to originate from southwest Ethiopia, Wush Wush is a rare variety known for its floral aromatics, vibrant fruit notes, and tea-like character, offering a profile that may appeal to fans of Gesha.

A Gentle Approach to Fermentation

For this lot, cherries undergo a controlled 72-hour fermentation before being washed and patio-dried. The process is designed to build sweetness and structure while preserving the clarity and elegance for which Wush Wush is known. Rather than dominating the cup with fermentation character, it allows the variety's natural complexity to remain at the forefront.
